Campside Chili – Easy Camping Recipes

Ingredients:
1 lb ground beef
1 medium onion (peeled, chopped)
4 or so cloves of garlic (peeled, minced)
1 16 oz can diced tomatoes
3 cans chili beans ( we use red beans, kidney and chili just to mix things up)
salt, pepper, crushed red pepper, chili powder to taste.
Method:
On a cookstove or open grill, using at least a 4 quart stock pot brown your ground beef, onion and garlic until the onion is translucent. Be careful not to brown the garlic too dark, and make sure the meat is cooked through. Drain off the fat. Add the tomatoes, and the beans. Bring to a slow boil, then reduce the heat and simmer. After the flavors have a chance to blend, season to taste. Should simmer at least 30 minutes before serving.
We serve this chili with peanut butter sandwiches made with a peanut butter spread or grilled cheese sandwiches.
